Ingredients for 4 people
250 grams lentils
100 grams belly pork
1 onion
1 small glass olive oil
1 bay leaf
2 cloves of garlic
2 carrots
2 potatoes
1 large tomato
1/2 tsp turmeric
salt and pepper to taste
Method.
1, Soak the lentils for half an hour whilst preparing the other ingredients.
2,Peel and chop onions, carrots, garlic and potatoes. Grate the tomato.
3,Lightly fry all vegetables together.
4,Place soaked lentil in a pan with fried vegetable, bay leave, and seasoningsCover with water, it is best not to add too much to begin with as you can add more as required.
5, Bring to the boil, cover and simmer gently for 45 minutes.
Serve with fresh crusty bread.
Variations
Any number of different vegetables can be used, e.g. turnips, green beans,celery,red or green peppers, leeks etc.You can also usea glass of full bodied red wine to add more flavour and one or twocloves.
