Recipe for Albodingas.

Recipe for Albodingas or Spanish Meatballs.

Albodingas are popular and tasty Spanish meatballs, often served in bars as tapas. Having made the meat balls they are then normally served in a tomato sauce, the recipe for which you will also find below.

recipe for albodingas Ingredients

1/2 a kilo of minced pork

2 slices of bread,soak this for around 2 hours in milk or water then squeeze out.

1 tbs.finely chopped onion

2 tbs. chopped parsley

1 minced garlic clove

salt and pepper to taste

1/4 tsp. grated nutmeg

1 egg beaten

Flour for coating

Olive oil

First cook the minced pork by either frying or simmering in a little water.

Place bread,onion,garlic,parsley, nutmeg,egg and salt and pepper in a food processor and process until smooth. If you don“t have a processor place all in large bowl and work well by hand until it is smooth and well mixed. Add the meat and process or hand mix a little longer. Form the mixture into 3cm. balls and roll in the flour.Fry them slowly in the olive oil, turning regularly until they are nicely browned.

Add to the sauce and simmer for around 20 mins. adding a little extra water or stock as necessary to prevent it from sticking.

Makes around 35 meat balls.

Salsa de Tomate, Tomato Sauce.

Ingredients.

2 kilos ripe tomatoes, peeled, seeded and chopped

50ml. Olive Oil

1 clove garlic

1 small chopped onion

1/4 tsp. cumin

1/4 tsp. black pepper

1/2 tsp. sugar

1 bay leave.

1 tsp chopped parsley

1 tsp sea salt

100ml.white wine, stock or water

Heat olive oil and lightly fry onion and garlic to soften.Add the diced tomatoes and cook over a high heatfor several minutes, stirring all the time. Add all the rest of the ingredients,bring to the boil, cover and simmer for 45 mins. Remove the bay leave,then pass through a sieve or place in a liquidizer.

Will make around 750.00 ml. of a rich and tasty tomato sauce.
