Gambas pil pil is a favourite way of serving prawns in Spain and should arrive at the table," pil-pileando" which, rather as the name suggests, means the oil should be hot and spluttering.
It is traditionally made in individual earthenware dishes which you can buy very cheaply on the markets or in the "100 peseta shops" in Spain. If you canīt buy these then just cook all the prawns together in a frying pan and serve on a hot platter.
Into each dish put the olive oil, garlic, chilli pepper and paprika.Place the dish directly on to the heat and heat until the oil is quite hot. Add the peeled prawns and cook until they turn pink and curl slightly, about 2-3 minutes. Sprinkle on the parsley and serve the gambas pil pil immediately with a plate of bread chunks for soaking up the delicious sizzling juices and lemon wedges.
